Not in my kitchen ...
.... but only because it's pretty small ... a friend and I have been getting together once a week for the past couple of months to cook a week's worth of meals for our families. Her kitchen is huge and all the appliances work, plus her only dog is obedient and lays down in the corner when told.
An-y-way.... last night's food frenzy was particularly tasty. It's chicken week, and we turned out 4 of 5 intended recipes:
Mrs. Vobe's Breaded Chicken with Sauce (from an ancient Williamsburg recipe, layers chicken over slices of ham)
Chicken and Wild Rice Casserole (a mushroom sauce pulls the dish together)
Chicken Casserole Supreme (breasts over chipped beef and below a mushroom sauce) (why, yes, I do like fungi!)
Chicken, Spinach and Raisin Enchiladas (Monterey Jack cheese is also mixed in to what goes into the tortillas)
The last recipe came from a "Light Cooking - Mexican" book and the middle two from "Virginia Hospitality" which was published by the Jr. League of Hampton Roads.
A friend brought the Junior League book when she visited many years ago. Our paths have diverged and I miss hearing from her. Depending on how we like the dishes, I may renew my attempts to reinstitute our correspondence! Heh!
Anyway again, good eatin'. Also -- sure! I'll post recipes if requested.
